Banana Cake recipe healthy


Ingredients
75g (1 / 3 cup) butter, softened
110g (1 / 2 cup) of powder (primary granules) sugar
1 large egg, beaten
225g flour (2 cups) plain (all purpose)
Level 2 v. teaspoon baking powder
the grated peel of 1 orange and 1 lemon (optional)
4 ripe bananas
50g (1 / 2 cup) chopped walnuts

Method

Grease and base line loaf pan size 8.5 x 19 cm (1 lb. capacity), or 12 cases throughout baking cups in a muffin cup. Preheat oven 350F/180C/gas 4.
Enter the powdered sugar butter and eggs in a bowl. Sift flour and baking powder. Using a blender, mix until blended. Add lemon zest and lemon if desired.
Slice bananas in another bowl, and mash to a paste. Add to flour mixture, along with walnuts and whisk again thoroughly.
Pour the mixture into the pan or cases and bake until risen and golden and springs back when pressed with finger. A loaf takes about 50 minutes.Muffins take 15-20 minutes.
Let cake cool in pan for 10 minutes before turning into a grid.
