Orange Oatmeal Cranberry

2 c orange juice 
1 c water 
1 / 4 c. teaspoon salt 
1 / 8 c. teaspoon ground cinnamon 
2 c Oatmeal (quick or old, rough) 
1 / 2 c dried cranberries 
1 c low fat or fat-free vanilla yogurt 
1 / 4 c chopped toasted walnuts 
Additional dried cranberries (optional) 


In a medium saucepan, bring orange juice, water, salt and cinnamon to boil gently. Stir in oatmeal and cranberries. Return to boil, reduce heat to medium. Cook 1 minute for quick oats, 5 minutes for oats in the old or until most liquid is absorbed, stirring occasionally. Let stand until desired consistency. Spoon oatmeal into four cereal bowls. Garnish each serving with 1 / 4 c yogurt, 1 tablespoon and nuts, if any, extra Cranberry. In microwave: In a bowl, microwave 3-liter, mix all ingredients except yogurt and nuts.Microwave on HIGH 4 to 6 minutes for quick oats and 7 to 9 minutes for oats in the old or until most liquid is absorbed. Let stand until desired consistency. Garnish each serving with yogurt, nuts and, where appropriate, additional cranberries.
